After all, a cupcake is basically a personal cake in a portable package. That’s hard to forget. This red velvet cupcake pays homage to the big cake featured in the “I Bet You Think About Me” music video. With Miss Americana Buttercream Frosting, you’ll definitely want to dip in your finger and try before devouring the entire cupcake. This recipe makes a baker’s dozen, aka thirteen, which also happens to be Taylor’s favorite number.

She was born on December 13, 1989. Her first album went gold in thirteen weeks. Her first song that reached number one had a thirteen-second intro. She even used to write the number 13 on the back of her hand for shows during the Fearless tour. So it’s no surprise that the number 13 has become synonymous with good luck for Taylor.

And lucky you, with the extra cupcake, you can snag one for yourself after sharing with your friends. Makes 13 cupcakes 1¼ cups all-purpose flour 1 cup sugar ¼ cup unsweetened cocoa powder ½ teaspoon baking soda ¼ teaspoon salt 1 large egg, room temperature ½ cup vegetable oil ½ cup buttermilk, room temperature 1 tablespoon liquid or gel red food coloring 1 teaspoon white vinegar 1 teaspoon pure vanilla extract Miss Americana Buttercream Frosting 1.

Set an oven rack in the center position and preheat the oven to 350°F. Place a cupcake liner in each well of a 12-cup muffin tin. Line just one well of a second muffin tin and set aside. 2. Whisk together the flour, sugar, cocoa powder, baking soda, and salt in a medium bowl. 3. Beat the egg in a large bowl. Whisk in the vegetable oil, buttermilk, food coloring, vinegar, and vanilla until smooth.

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. 5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full. 6. Bake until lightly golden on top and a toothpick inserted into the center comes out clean, 18 to 20 minutes. Let the cupcakes cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. 7. Once the cupcakes are completely cool, apply the frosting with either a piping bag or a spatula.
