This granola can also be beneficial for those with any inflammatory issues such as IBS, who may need to take a break from grains. Joy’s Favourite Breakfast Cookies I love these cookies!
They are packed with fibre, flavour and nutrition. I make batches of them to freeze when I know I’m going to have a super-busy week. I enjoy them straight out of the freezer too. These are the perfect grab-and-go breakfast food or snack. Enjoy with a Refreshing Green Juice . Makes 12 to 14 cookies Vegetarian Gluten-free Dairy-free Refined Sugar-free 1 cup (250 mL) brown rice flour ¾ cup (175 mL) almond meal/flour (ground almonds) 2 tbsp (30 mL) cinnamon ½ tsp (2 mL) baking soda 1 cup (250 mL) old-fashioned rolled oats ½ cup (125 mL) raisins ¼ cup (60 mL) ground flaxseeds ¼ cup (60 mL) unsweetened, unsulphured coconut flakes ¼ cup (60 mL) chopped walnuts (optional) 2 large eggs ¾ cup (175 mL) coconut oil, melted ¼ cup (60 mL) real maple syrup 2 tbsp (30 mL) blackstrap molasses 1 banana, mashed 1 tsp (5 mL) pure vanilla extract Preheat oven to 350°F (180°C).
Grease a baking sheet with coconut oil or line with parchment paper. In a large bowl, whisk together brown rice flour, almond flour, cinnamon and baking soda. Stir in oats, raisins, flaxseeds, coconut flakes and walnuts, if using. In a small bowl, whisk eggs. Whisk in melted coconut oil, maple syrup, molasses, mashed banana and vanilla.
Pour into dry mixture and stir just until well combined, but do not overmix. Drop by large spoonfuls onto the baking sheet and press down lightly with the back of a spoon or with your hand. Bake for 12 to 14 minutes; the edges will be a little browner. Store in the fridge for up to 10 days.
These cookies also freeze well for months.
