Bake for 20 mins or until soft. Core and deseed, then set aside. In a large, wide, lidded saucepan, heat the oil and add the onion, garlic, ginger and chillies. Cook, stirring, for 5 mins. Add the lemon juice and white wine, then simmer for 5 mins. In the meantime, place the tomatoes and the baked red pepper into a food processor, and blitz until finely chopped. Add the tomato mixture to the saucepan and stir it in. Bring to the boil and simmer for 5 mins.

Add the lemon zest, sugar, coriander and cod, then season with sea salt and black pepper, and cover with a lid. Simmer for 15-20 mins, then garnish with coriander. Grease and line the loaf tin with baking paper. In a saucepan, melt the butter, then heat for 3 mins until browned. Pour half of the butter into a large mixing bowl. Add the milk, the eggs, and 150g of the honey. Whisk until smooth. Mix in the vanilla, flour, bicarbonate of soda and thyme leaves. Pour into the prepared tin and bake for 45 mins or until a metal skewer inserted in the centre comes out clean. Leave to cool for 10 mins. Add the remaining honey to the saucepan containing the remaining brown butter.

But there is also a more responsive side; an element of growing that conjures memories or emotions, appealing to more than just the eye. My gran’s garden was long and narrow, divided across the centre by a deep border of dianthus, or pinks. Even now, many years later, the scent of a pink transports me back to my childhood; stepping out of her back door to the overwhelming fragrance of their powder-puff flowers.

In my own garden, the star jasmine on the patio, bathed in sun throughout the day, gives back the warmth in the evening, in the form of intoxicating scent, encouraging me to sit awhile and relish its perfume. My old-fashioned rose, while it only blooms in June, has a scent that cannot be ignored, and a few steps away, the lemon balm is a plant I could not be without.

Vigorous but unremarkable, it may not look like a plant to cherish, but crushing its leaves releases a citrus scent that is instantly uplifting. If I ever feel in need of a moment to pause and reset, this is the plant I turn to.
