Line a wire rack with baking paper. Sift \ufb02ours into a large bowl. In a stand mixer \ufb01tted with whisk attachment, whisk eggs for 5 minutes, or until thick and tripled in volume. Gradually add caster sugar, whisking constantly, for 6-8 minutes, until sugar has dissolved.<\/p>\n<p>Using a metal spoon, fold in \ufb02our mixture in two batches, folding all the way to the bottom of the bowl to pick up any pockets of \ufb02our, then fold in butter and vanilla. Pour into prepared pan. Bake for 30-35 minutes, until a skewer inserted in the centre comes out clean.<\/p>\n<p>Cool in pan for 5 minutes. Turn onto prepared wire rack to cool completely. In the clean bowl of a stand mixer \ufb01tted with the whisk attachment, whisk cream and extra vanilla to stiff peaks. Set aside. Cut sponge into 15 even squares, then cut each square in half.<\/p>\n<p>Spread cut side of one half of each square with an even layer of jam, then top with a thick layer of cream mixture. Top with remaining sponge halves. Place on a tray. Chill for 30 minutes. For the icing, combine icing sugar, cocoa and 1 cup (250ml) boiling water in a large bowl until smooth. Working with one lamington at a time, dip in icing, allowing excess to drip off, then coat in coconut.<\/p>\n<p>Return to tray and chill for 30 minutes to set before serving. NOTE: Lamingtons are best eaten on the day they are made. LAMB &#038; ROSEMARY PIES MAKES 6 Begin this recipe a day ahead. You\u2019ll need 6 x 10cm x 3cm-deep, 1-cup (250ml) capacity round pie dishes. 2 x 375g frozen all-butter puff pastry sheets (we used Car\u00eame), just thawed 1 egg, beaten Mashed potatoes and mushy peas, to serve SOUR CREAM PASTRY 355g strong (baker\u2019s) \ufb02our 215g unsalted butter, chopped, slightly softened 90g sour cream FILLING 2 tbs extra virgin olive oil 1 onion, chopped 500g diced lamb (we used lamb leg) 3 garlic cloves, crushed 3 tsp ground cumin 3 tsp tomato paste 2 cups (500ml) beef stock 2 tbs rosemary leaves, \ufb01nely chopped, plus extra sprigs, to serve 1 tbs wholegrain mustard 2 tsp Worcestershire sauce 1 large carrot, cut into 1cm pieces 1 large potato, peeled, cut into 1cm pieces 1 tbs corn\ufb02our Grease 6 x 10cm x 3cm-deep, 1-cup (250ml) capacity round pie dishes.<\/p>\n<p>For the pastry, in a stand mixer \ufb01tted with the dough hook, knead \ufb02our, butter and 1 tsp \ufb01ne salt on low speed for 2 minutes, or until a crumble forms (do not overmix, or pastry will be tough). Add sour cream. Knead on low speed for 4 minutes, or until well combined and the dough has no traces of \ufb02our.<\/p>\n<p>Roll out between lightly \ufb02oured sheets of baking paper until 4mm thick, then cut out 6 x 16cm rounds (use an upturned plate), re-rolling offcuts as you go. Line prepared pie dishes with pastry rounds, then cover and chill overnight. For the \ufb01lling, heat oil in a large saucepan over medium-high heat.<\/p>\n<p>Cook onion, stirring occasionally, for 3 minutes, or until lightly browned.
