Overlap slices in a row down one side of the platter. Place turkey slices next, then a row of Swiss cheese. Follow with a row of corned beef. Then use more roast beef and again the cheese. Roll the pastrami and ham in fingerlengths ; make a little stack of each. Slice the green pepper in rings. Put a ring around each stack of rolled meat.<\/p>\n<p>Space these around the platter. Garnish the platter with kabobs made of beet buds, onions, olives green and black, on 4&#8243; wooden skewers. Put dill pickles sliced lengthwise on a side plate. Serve with a basket of dark thin-sliced breads. This Beet-and-Prune Relish is also a good accompaniment. 1 #2 can pickled 1 tablespoon concentrated julienne beets frozen orange juice 2 teaspoons cornstarch 6 dried prunes, soaked, 1 teaspoon sugar pitted and coarsely diced Juice of 1 lemon Drain beets; set aside.<\/p>\n<p>Pour the juice into a saucepan and add the rest of the ingredients. Stir and cook until thickened. Pour the sauce over the beets. Serve chilled. Use a thin wheel of bread, cut from the widest part of a huge round bread, to give you a unique way to present an appetizer which is really like a pie-full of delights. 1 very large round dark bread 8 ounces cream cheese, at room temperature Few drops green vegetable coloring (optional) 8 ounces black salmon eggs (or caviar if you&#8217;re rich) 4 ounces smoked salmon, sliced 6 eggs, hard-cooked 1 tablespoon mayonnaise 1 teaspoon lemon juice 1 tube anchovy paste V4 cup minced parsley Cut a thin slice from the center of the bread all the way across to get as large a round wheel as possible.<\/p>\n<p>This will be a base on which to build your rings of food. Remove the crust. Assuming that your bread is 12&#8221; in diameter, you proceed to cover it as follows (if the bread is smaller, eliminate some rings) Divide the cream cheese in half. Some are sweets . . . candies, prepared fruits, tarts and cakes. Some are fish or meat or vegetable &#8216;&#8221;finger food,&#8221; the kind you&#8217;d serve at a party or give to your family as a special treat.<\/p>\n<p>A few of the dishes would be a little messy if you tried to manage them with your fingers but they are prepared in bite-size pieces and can be eaten only with a fork, plate perched on your lap, or if necessary, while you&#8217;re standing at a cocktail party. We worked round the clock, boiling corned beef on the one-burner stove in the store, setting the yeast dough to rise in our apartment at one in the morning.<\/p>\n<p>Yet, after my husband died, it was my skill in cooking that allowed me to raise two small children and then to educate them. Eventually we all settled in Portland, Oregon, where my restaurant &#8216;&#8221;Rose&#8217;s&#8221; became quite famous.
