In places like the United States, France, and Scotland, where traditional barrel-aged spirits are made, finding a cooperage that can supply a new barrel, or a distillery or barrel broker that can provide a used barrel, shouldn\u2019t be a challenge. Using a used barrel is a long-standing tradition in many parts of the spirits industry. It\u2019s not in the bourbon industry, which requires new barrels each time. For that reason, bourbon barrels move on to other parts of the industry: Scotland for scotch, the Caribbean for rum, and to Mexico for tequila.<\/p>\n<p>A barrel may stay in the industry for decades; it may be broken down and rebuilt, recharred, or retoasted. It might be used as is. If you can get a barrel new from a cooperage, you might be able to pick your wood type, size, and amount of toast or char. If you go with a used barrel, try to source a fresh one. A barrel that hasn\u2019t been used recently and was left to sit unfilled will dry out and shrink.<\/p>\n<p>It\u2019s at risk of completely falling apart to loose staves. However you source your barrel, make sure it\u2019s the right size for your needs, and use it sooner rather than later. Like I mentioned, a barrel likes to be wet. If you don\u2019t use it right away, it will dry out. If you\u2019re only able to fill the barrel half way, you may want to wet the top of your barrel down occasionally to keep it from shrinking too much during the aging process.<\/p>\n<p>Small rotations or rolling it (if it\u2019s a smaller barrel) will also help. 110 proof (55% ABV) is typical in the spirits industry for aging. 100 to 110 proof is a sweet spot for most aged spirits. Barrels require some managing and care, but it\u2019s nothing that you can\u2019t handle. If you received a dry barrel from a distillery and don\u2019t plan to use it right away, you\u2019ll likely want to rehydrate it.<\/p>\n<p>Filling the barrel with hot water (whatever comes out of your faucet) right away is a good idea.
