Joyous Tip \u2022 \u2022 \u2022 Many people are sensitive to grains such as oats (even if they are certified gluten-free), and it\u2019s very difficult to find a commercial grain-free granola, which is why I created this totally grain-free recipe. This granola can also be beneficial for those with any inflammatory issues such as IBS, who may need to take a break from grains. Joy\u2019s Favourite Breakfast Cookies I love these cookies!<\/p>\n<p>They are packed with fibre, flavour and nutrition. I make batches of them to freeze when I know I\u2019m going to have a super-busy week. I enjoy them straight out of the freezer too. These are the perfect grab-and-go breakfast food or snack. Enjoy with a Refreshing Green Juice . Makes 12 to 14 cookies Vegetarian Gluten-free Dairy-free Refined Sugar-free 1 cup (250 mL) brown rice flour \u00be cup (175 mL) almond meal\/flour (ground almonds) 2 tbsp (30 mL) cinnamon \u00bd tsp (2 mL) baking soda 1 cup (250 mL) old-fashioned rolled oats \u00bd cup (125 mL) raisins \u00bc cup (60 mL) ground flaxseeds \u00bc cup (60 mL) unsweetened, unsulphured coconut flakes \u00bc cup (60 mL) chopped walnuts (optional) 2 large eggs \u00be cup (175 mL) coconut oil, melted \u00bc cup (60 mL) real maple syrup 2 tbsp (30 mL) blackstrap molasses 1 banana, mashed 1 tsp (5 mL) pure vanilla extract Preheat oven to 350\u00b0F (180\u00b0C).<\/p>\n<p>Grease a baking sheet with coconut oil or line with parchment paper. In a large bowl, whisk together brown rice flour, almond flour, cinnamon and baking soda. Stir in oats, raisins, flaxseeds, coconut flakes and walnuts, if using. In a small bowl, whisk eggs. Whisk in melted coconut oil, maple syrup, molasses, mashed banana and vanilla.<\/p>\n<p>Pour into dry mixture and stir just until well combined, but do not overmix. Drop by large spoonfuls onto the baking sheet and press down lightly with the back of a spoon or with your hand. Bake for 12 to 14 minutes; the edges will be a little browner.
