Preheat the oven to 350°F/180°C. Line a rimmed baking sheet with parchment paper. In a large bowl using a handheld mixer or in the bowl of a stand mixer fitted with the paddle attachment, mix together the flour, sugar, salt, and nutmeg for about 15 seconds, or until combined. Add the butter, peanut butter, and egg yolks and mix on low speed until a dough ball forms (feel free to do all this in a food processor, using the pulse function).
Drop rounded 1-Tbsp portions of dough onto the baking sheet, spacing them 2 in/5 cm apart. Using the tines of a fork dipped in a bit of flour, press the rounds down, making a crosshatch pattern while flattening them slightly. Bake for 10 to 13 minutes, until the cookies have just turned golden brown. Let the cookies cool for 3 minutes on the baking sheet, then transfer them to a wire rack to cool for 10 minutes.
Serve with a dusting of confectioners’ sugar on top. The cookies will keep in an airtight container at room temperature for up to 1 week.
